BRAISED CABBAGE

This simple preparation requires the following ingredients:

1 head of cabbage, either green or red, sliced very thin.
1 medium onion, sliced very thin.
1 apple, peeled, cored and grated just before using.
½ cup water, vegetable or chicken stock, white wine or apple cider.
Red wine or sherry vinegar.
2 Tbsp. Butter, vegetable oil or clarified butter.

To prepare:

1. In a large pan heat the butter or oil over medium heat.
2. Add the sliced onions and cook until soft, about five minutes.
3. Add the cabbage, cooking liquid (water, stock or wine) and season with salt and pepper.
4. Cover and simmer for 20 minutes.
5. Remove cover, add the grated apple and simmer another five minutes.

Serves 4
