Easy-to-grow, a leafy perennial up to 5' tall. The treasure is in the roots, which when grated and mixed with vinegar become the pungent sauce we know as horseradish. The roots should be harvested each fall to keep them from becoming woody and invasive. Use some to prepare the sauce which will keep for months when refrigerated. The remainder can be planted for next year's crop. Perennial in zones 2-9.
